Wash the spinach thoroughly and remove the thick stems. In a sauté pan, melt the butter over medium heat and sauté the shallots until soft but not brown. Turn up the heat and add the spinach all at once. Stir and cook for a minute or two until the spinach is just wilted. Remove from the heat and season to taste with nutmeg, salt, and pepper.
