Method

In a sauté pan, heat the olive oil and sauté the onion, tomatillos, and garlic until lightly-colored. Add the serrano chile, poblano chiles, coriander seeds, cumin seeds, stock, and wine and bring to a boil. Lower the heat and simmer for 5 to 8 minutes, uncovered, or until somewhat thickened.
