Method

Squeeze the garlic from the cloves and mash in a small bowl. Mix in the butter, cheese, and chives until relatively smooth. Season to taste with salt and pepper. The butter can be wrapped in a log shape in plastic and foil and stored in the refrigerator for up to 5 days or frozen for up to 1 month.
