Method

In a medium saucepan, heat the olive oil over medium heat and sauté the onion until soft but not brown. Add the rice and sauté 2 minutes longer, stirring occasionally. Add the orange zest, cinnamon stick, water, orange juice, and salt and bring to a boil, stirring once or twice.
