  • 6 cups finely shredded red or green cabbage, or a combination
  • 2 cups finely julienned or shredded carrots<

Method

In a large bowl, mix together the cabbage, carrots, bell pepper, and snow peas and refrigerate. In a small bowl, whisk together the vinegar, lime juice, fish sauce, olive oil, sugar, ginger, and chile and allow to sit for at least an hour before using. Stir into the cabbage mixture along with the cilantro. Season to taste with salt and pepper and serve.
