In a medium bowl, mix together the flour, salt, pepper. Heat 1 inch of oil in a deep saucepan to 350°F on an instant-read thermometer. Dredge the onion rings in the seasoned flour and shake off the excess. Fry in batches in the hot oil until crisp and brown. Drain on paper towels. Can be prepared up to an hour ahead.
