Method

In a medium saucepan, simmer the stock and saffron together for 3 minutes. Add the cinnamon, nutmeg, and olive oil and pour through a fine-mesh strainer over the couscous in a medium bowl. Cover and let stand for 5 minutes, then fluff with a fork.
