Apricots are one of Mother Nature’s great gifts to us and are my favorite stone fruit. Like many things in nature, there are a number of varieties that differ in size, from as small as a cherry to as large as a peach, and color, including white, black, grey, and pink. The eastern Mediterranean area around Turkey is the home of many of these exotic varieties.
