There are many different recipes for making your own ricotta cheese. One of the simplest and best that I know is the version from Deborah Madisons book The Savory Way. It’s a magical process to participate in and the result is wonderful. A thermometer is helpful here. My bet is that once you make your own ricotta you’ll never again buy the little white tubs in the supermarket.
