Originally, I made this with regular fresh bananas but then tried roasting them first. I loved the result. This creamy ice is a wonderfully refreshing finish to a spicy meal. You can try substituting coconut milk for part of the water and adding a pinch of nutmeg or cinnamon to the mix.

Ingredients

  • 2 pounds ripe bananas
  • cups sugar
  • 3 cups <

Method

Preheat the oven to 375°F. On a baking sheet, put the whole, unpeeled bananas and roast them for 15 minutes or until their skin is black and just beginning to split. Remove from the oven and, when cool enough to handle, discard the skin. You should have 2 cups of banana pulp.
