Lychee Sorbet with Fresh Fruits

The lychee is an Asian fruit with a distinctive flavor. You usually see lychees canned in syrup, but in the summer you can find them fresh in Asian markets and some farmers’ markets. Also look for their hairy cousin, rambutan.

Ingredients

  • One 15-ounce can lychees in syrup
  • ½ tablespoon unflavored gelatin

Method

Drain off ½ cup of the lychee syrup and transfer to a small bowl. Sprinkle the gelatin over the syrup and set aside 1 minute.

Meanwhile, heat the sugar and water in a saucepan over medium-high heat until the sugar melts, then remove from the heat. Whisk in the gelatin mixture and set aside.
