This simple spread is delicious on crisp pita triangles. Add more or less chile as your taste dictates.
In a sauté pan, heat the olive oil over medium heat and sauté the shallots, garlic, curry powder, mustard seeds, and chile until fragrant and the shallots are softened, about 3 minutes. Add to a food processor along with lentils, cilantro, and enough cooking liquid to make a spreadable mixture. Season to taste with salt and pepper. Store, covered, in the refrigerator for up to 5 days.
