Opal, or purple, basil is one of the dozens of basil varieties. It gives this drink a beautiful pink cast. You can use regular basil if opal is not available.

Ingredients

  • 2 cups fruity white wine, such as Riesling

Method

In a medium saucepan, combine the wine, water, basil, chopped peaches, and honey and bring to a boil. Lower the heat, cover, and simmer for 5 minutes or until the peaches are very soft. Remove from the heat and let the mixture cool. Strain through a very fine-mesh strainer, pressing down on the solids. Stir in the lemon juice, adjusting the sweetness level with more honey, if you want, and chil
