This simple carrot soup is ideal when you want something rich, soothing, light and sweet. Carrot and ginger would be the obvious choice here – and, as you can tell, I love ginger! Or carrot and coriander, which is very good for Pitta. But I love this soup – with a delicious sour note from the lime, it’s lip-smackingly good. It makes the perfect starter for four or light meal for two.
