This little tumbler of warm, spiced apple juice served with a tiny teaspoon of Dosha churna (or ‘choona’) spice mix is definitely a conversation starter.

The idea came from my stay at Vana Ayurvedic Retreat, where they had two restaurants: the day-to-day one that we mostly favoured; and the fancy one where we could choose from a Dosha-specific Thali menu, which always started with this drink. The gingery sweet liquid coats your tongue, then the spices hit your tongue like a sherbet
