I’d not heard of this dish until midway through the pop-up cafe when I got an email from Christa, a friend who is a journalist. She’d been to the cafe for lunch and had thoroughly enjoyed it and asked whether cabbage thoran, one of her favourite dishes from Goa, could make an appearance on the menu. I love cabbage, and I love a cabbage recipe, so although I’ve never knowingly eaten this particular dish in India, it’s now a staple side dish at home.
