Ingredients: 1 cabbage (about 400 g), halved, shredded into long 1 cm (½ in) slices, washed and drained; 1 onion, shredded lengthways into fine slices; 1 green chilli, chopped; 1½ tsp vegetable oil; sea salt, to taste; ¼ tsp ground turmeric; ½ tsp cumin seeds; 2 tbsp desiccated coconut; 1 dried red chilli, halved and seeds removed; 1 tsp black mustard seeds; 10 fresh curry leaves

I’d not heard of this dish until midway through the pop-up cafe when I got an email from Christa, a friend who is a journalist. She’d been to the cafe for lunch and had thoroughly enjoyed it and asked whether cabbage thoran, one of her favourite dishes from Goa, could make an appearance on the menu. I love cabbage, and I love a cabbage recipe, so although I’ve never knowingly eaten this particular dish in India, it’s now a staple side dish at home.
