Soaking the bircher for a couple of hours, or ideally overnight, makes it easier to digest and gives it a softer texture. This makes more compote than you need for one serving but it will last for several days in the fridge.

Ingredients

For the Bircher

  • 30 g rolled or jumbo oats
  • 1 apple, skin on, grated
  • 30

Method

Mix all the ingredients for the bircher together in your serving bowl. Cover and refrigerate overnight so it’s ready for the morning.

For the compote, add everything to a smallish pan and bring to a simmer over a low heat. Don’t allow it to come to a boil. Simmer for 10 minutes or so, then strain, while still warm, through a fine sieve into a jar.
