This is a bonk buster of a recipe inspired by Alison Jackson. It is essentially a set coconut rice pudding heavily laced with Oreo cookies. I can imagine gaining power just knowing it’s in my bar bag. Note that it must be stored in the fridge.

Ingredients

  • 150 g short grain rice such as sushi rice, pudding rice or Arborio
  • 200 ml unswe

Method

Line a 20 x 20cm baking tin with greaseproof paper.

Rinse the rice in several changes of water until it runs clear. This is important to rid the rice of excess starch that can make it stodgy rather than fluffy. Place in a medium saucepan and add the coconut milk, 160 ml water and the salt.
