To tell you the truth, the magic in this pasta is that it’s just really tasty and easy to cook. There’s no trick to it; you’re essentially just cooking the pasta like risotto rice.


  • 4 tbsp olive oil
  • 1 onion, finely chopped
  • 2 garlic cloves, finely chopped


Heat the olive oil in a large, wide pan and add the onion and garlic. Fry for 2–3 minutes, or until the onion is fragrant and translucent, then add the pasta and stir well to coat it in the oniony oil. This should take about 2 minutes.

Turn up the heat a little and add the white wine. You should hear it sizzle. Give everything a stir, then add the roasted peppers and sun-blushed tomatoe
