Risotto is comfort food, ideal for post-ride recovery, and very easy to conjure out of a storecupboard with very little in it. Here is a hearty, warming mushroom version but you could substitute other vegetables too, as in the spring variation inspired by Victoria Gill’s green risotto (see variation).
