Tortilla is a traditional Spanish potato omelette, which is sliced and eaten at room temperature and therefore particularly good for lunch picnics or cold buffets.

I have taken a little licence here and made mini ones, and added some calalloo and cheese and this and that. Have some fun mixing your layers and combinations in each cup and feel free to try some new flavours as you get a taste for it.
