This is Florida’s state pie. Its tart and sweet flavor is delicious on warm days. Key limes are not always in season or available, so feel free to use the Persian limes that are commonly found in markets. The best flavor comes from using fresh lime juice; resist using bottled. There’s a lot of crust and filling; be sure to use a deep-dish pie plate that has a depth of 1½ to 2 inches.
