Praline is a paste of nuts with a minimum of 50 percent almonds or hazelnuts, or a mixture of both, to which sugar is added. The nuts and sugar are cooked to enhance their flavor. The cooked mixture is then cooled, ground, and worked further to make it as smooth as possible.
