These thin cigarette cookies are far easier to make than you might imagine. The chocolate recipe given here is a delicious variation on the classic cigarette cookie recipe.

Ingredients

  • 7 tablespoons (3 ½ oz./100 g) butter
  • ¾

Method

Cover the pencil in plastic wrap. Butter the baking sheet if using. Preheat the oven to 400°F (200°C). In a saucepan, melt the butter, whisking* it constantly, until it browns (beurre noisette).

Pour the melted butter into a mixing bowl. Lightly whisk the egg whites.
