This cookie dough is flavored with cinnamon, making it an excellent pairing for the spicy notes of certain types of chocolate.

Method

Take the butter out of the refrigerator several hours before you begin baking and place it in a mixing bowl. When it has reached room temperature, use a flexible spatula to soften it (pommade).
