  • 1 lb. 5 oz. (600 g) strawberries

Method

Prepare the homemade strawberry coulis. Hull the strawberries, wash them, dry them carefully, and blend them with the sugar and lemon juice. Taste to see if extra sugar is required. Strain through a chinois and weigh out 10 ½ oz. (300 g) for the strawberry cloud.
