Method

A day ahead, or at least 3 hours ahead, prepare the whipped ivory-truffle ganache. Chop the chocolate and melt it slowly in a bain-marie or in the microwave oven (on “defrost” or at 500 W maximum, stirring from time to time). Bring the ⅓ cup (80 ml) whipping cream to the boil.
