Old-School Spinach-Stuffed Tomatoes

If you’ve ever been to Joe’s Stone Crab in Miami Beach, you’ve probably ordered the stuffed tomatoes. They are so freaking good! The portions are really big, so I usually end up taking some home; I chop up the leftovers and add them to my scrambled eggs in the morning. Yum. Joe’s puts American cheese on top of theirs, but I like using Gruyère. Honestly, though, it’s melted cheese, so obviously it tastes great and you can use whatever kind you prefer.
