Warm the olive oil in a small sauté pan over medium heat. Add the onion and celery and sauté until soft and sweet, 8 to 10 minutes. Transfer to a bowl and let cool.

Add the crab, lemon zest and juice, chives, 3 tablespoons parsley, and the mustard to the onion mixture, mix well, and then add enough of the mayonnaise to bind the mixture. Season with salt, black pepper, and cayenne pepper.
