Pasta rolls, or rotoli, are a specialty of Emilia-Romagna, but, of course, good food ideas travel. Rotoli are featured on the menu at the Circolo Enogastronomico per Bacco in Padua, in the neighboring region of the Veneto. The uncooked dough is spread with a filling, rolled, wrapped, and simmered in salted water. (A fish poacher or large roasting pan with a rack is ideal.)
