Giovanni Serrazanetti at Cantina Bentivoglio, in Bologna, sent me recipes for fresh pasta, fillings for tortelloni, and this classic recipe for ragù alla bolognese, which, along with salsa besciamella, the classic Italian cream sauce, can be used for making pasta al forno in the style of Bologna. You may use these sauces to assemble a fine lasagne alla bolognese as well.
