Natchitoches is a town in Louisiana famous for its Christmas festival and these savory meat pies. The filling features the trinity of celery, onion, and bell pepper famous in Cajun cooking as well as beef or a mixture of beef and pork. In Natchitoches, they deep-fry their meat pies. In my house, I air fry them, and they come out a beautiful golden brown with a rich gravy bubbling around the edges.
