Method

Reduce 1 litre ( pt or U.S. cups) of Sauce Demi-glace until slightly thickened. Remove from the heat and add 1 dl ( fl oz or ½ U.S. cup) Madeira wine to correct its consistency. Pass through a fine strainer and do not reboil.
