Method

250 g (9 oz) lean salt belly of pork cut in batons, blanched and fried to a light brown colour in butter; 300 g (11 oz) button onions, glazed brown; 300 g (11 oz) button mushrooms, cut in half and sautéed in butter.

This garnish should be cooked with the pigeons or chickens and served over them.
