2 litres (3½ pt or 9 U.S. cups) very strongly flavoured Chicken Consommé.
2 tbs plain boiled peas; 20 Quenelles made of chicken and cream forcemeat, moulded with teaspoons; 2 tbs very black truffles cooked in Fron-tignan wine and cut in fine Julienne.
