Method

2 litres ( pt or 9 U.S. cups) very strongly flavoured Chicken Consommé.

Serve separately in small china dishes, 10 very small whole or halves of braised lettuce; 20 chicken and cream forcemeat Quenelles piped with a star tube in the form of rosettes; 2 tbs truffle cut in rounds or in Julienne.
