2 litres ( pt or 9 U.S. cups) Mutton Consommé prepared in the same way as Ordinary Consommé using mutton instead of beef plus the addition of 6 tbs tomato purée and a little saffron. Pass through a clean cloth when ready.


2 tbs hard-boiled egg yolks passed through a coarse sieve; 1 dariole of ordinary Royale prepared with mutton brains, poached and cut into crescent-shaped pieces; 2 tbs grains of boiled rice.
