Method

2 litres ( pt or 9 U.S. cups) delicately flavoured Chicken Consommé.

Garnish

4 birds nest cooked in the Consommé; 3 tbs green asparagus tips; 2 tbs Julienne of truffles cooked in Champagne. Serve separately 20 small puff pastry patties filled with finely chopped and creamed crayfish tails.
