Sprinkle 120 g (4 oz) seed tapioca into 2 litres ( pt or 9 U.S. cups) boiling Chicken Consommé and allow to cook gently for 15–18 minutes.


30 small grooved Quenelles made from chicken forcemeat containing Crayfish Butter; 20 slices of very fresh beef bone marrow poached in a little Bouillon; 1 tbs short Julienne of truffle; 2 tbs cooked asparagus tips.
