To 1 litre ( pt or U.S. cups) of Consommé add 2 dl (7 fl oz or U.S. cup) purée of very red fresh tomatoes and 1 dl ( fl oz or ½ U.S. cup) strained liquid of tomatoes. Cover with a lid and cook very gently for 20 minutes but without boiling then pass through a fine cloth using very little pressure. Serve the Consommé very cold.
