With very few exceptions turtle soup is rarely prepared in the kitchen. It is usually purchased ready prepared either fresh, tinned or bottled, from firms which specialize in its preparation and who enjoy a high reputation for their product.
Even though a considerable amount of soup may be required there is still an incontestable advantage in buying it ready made. Nevertheless, for those occasions where it is found to be absolutely necessary to make it in the kitchen, the following simple and practical recipe is given.
