Method

Roll out a band of half puff paste or puff paste trimmings approximately 7 cm (3 in) wide by 7–8 mm (¼ in) thick; spread with a thin layer of forcemeat seasoned with Cayenne, which is more often than not a fish forcemeat. Cut into rectangles cm (1 in) wide, place on a baking tray and bake in a moderate oven for 12–14 minutes. The type of forcemeat used should be indicated in the title of the Allumette.
