Carefully remove the fillets from the required number of marinated trout, skin them and coat with Mayonnaise. Sprinkle with chopped lobster coral then arrange the fillets on a bed of vegetable salad in raviers; surround with a border of slices of hard-boiled eggs, radishes and cucumber.
