These are made from the same mixtures as Croquettes and in the same way they take their name from the main ingredient being used whether poultry, game or fish. However, they do differ from Croquettes in the final treatment inasmuch as they are not breadcrumbed. Cromesquis may be made according to any one of the following recipes and should be served with a sauce in keeping with the composition of the mixture.
