Method

Line some baked tartlet cases with a thin layer of chicken and cream forcemeat and place in a moderate oven for a few minutes to cook the forcemeat. Fill with thin slices of chicken, mushroom and truffle mixed with a little Sauce Supreme; cover with a thin layer of the same forcemeat and place in a moderate oven to cook. Serve arranged on a serviette.
