Sur le Plat

On a suitable buttered dish and using Pommes Duchesse mixture and a large star tube, pipe either a border around the edge, a rosette of separate compartments, or cover the dish with a number of connecting circles; eggwash and colour light brown in the oven.

Place in the bottom of the borders some very lightly cooked scrambled eggs
