Method

Prepare the sole and shallow poach in a dish with ½ d! (2 fl oz or ¼ U.S. cup) white wine and the same amount of mushroom cooking liquor.

When cooked, drain and place the sole in a suitable dish; reduce the cooking liquid and add it to a prepared
