Method

Fold the fillets and shallow poach with mushroom cooking liquor.

Drain and arrange them in a circle on a suitable dish. Place 8 nice, very White cooked mushrooms in the centre and coat with Sauce aux Champignons containing the reduced cooking liquid from the
