This is a variation of Timbale de Filets de Sole Escoffier also having some relationship with Cold Fillets of Sole on Mousse but much easier to prepare.

Prepare the Paupiettes of sole as in the previous recipe and cut into round slices. Place a deep silver dish in crushed ice and set a thin layer of Fish Aspic
