Pound 8 hard-boiled egg yolks with 125 g (4¼ oz) butter and pass through a fine sieve.

Reheat 5 moulds of terrapin in a Bain-marie and drain; place the pieces in a suitable pan and add 5 dl (18 fl oz or 2½ U.S. cups) cream. Simmer gently for 5–6 minutes then thicken by adding the puree of egg yolks and butter. Simmer gently for a further 10 minutes, finish with a little good Madeira and adjust the seasoning with salt, pepper and a little Cayenne.
